Homemade Pumpkin Ravioli with White Wine and Herb Butter Sauce Recipe courtesy of Marge Perry and David Bonom Servings: 4 Ravioli: 1 Can of 15 ounces of Pumpkin Puree 1 Large Egg, lightly beaten 1/3 Cup of grated Pecorino Romano cheese, plus additional for serving (optional) 2 Tablespoons of Plain Dried Breadcrumbs 2 Teaspoons of Sugar 1/4 Teaspoon of Salt 1 Pinch of Ground Nutmeg 48 Round Dumpling Wrappers Water Sauce: 6 Tablespoons of Cold Unsalted Butter, divided 1/3 Cup of Chopped Shallots 2/3 Cup of Dry White Wine 3 Tablespoons of Heavy Cream 2 Tablespoons of Chopped Fresh Sage 1 Tablespoon of Chopped Fresh Chives 1/4 Teaspoon of Salt To make the Raviolis: Line the fine mesh sieve with a dampened cheesecloth. Add the Pumpkin Puree and strain it for 1 hour. Transfer it to a bowl and stir in the Egg, the Cheese, the Breadcrumbs, the Sugar, the Salt and the Nutmeg. Arrange six dumpling wrappers on the work surface in a single layer. Place 1 Tablespoon of the Pumpkin Mixture in the center of each one and brush the edges with Water. Place a second wrapper over filling, carefully pushing out any air bubbles then pressing the edges to seal them. Transfer the Raviolis to a baking sheet covered with parchment paper. Place a sheet of plastic wrap over the Raviolis. Repeat with the remaining wrappers and filling. In a KitchenAid Evergreen Design Series 6-Quart Ceramic Stockpot over medium heat, bring the Salted Water to a gentle simmer. To make sauce: In a KitchenAid Evergreen Design Series 3-Quart Ceramic Saucepan over medium-high heat, melt 1 Tablespoon of Butter. Add the Shallots and cook them, stirring them occasionally, for about 1 minute. Add the wine and bring it to a boil, then cook it until the mixture resembles wet sand, for about 8 - 9 minutes. Reduce the heat to medium-low and whisk in the remaining Butter and the Heavy Cream until melted. Stir in the Sage, the Chives and the Salt; keeping it warm and stirring it occasionally. To cook the Raviolis, add half to the simmering Water and cook it, stirring it gently once or twice, 3 minutes. Remove them with the slotted spoon and divide it between two plates. Add remaining the Raviolis to the pot and repeat the process, dividing it between the remaining plates. Spoon the Sauce over the Raviolis and serve them with additional Grated Cheese, if desired. Butternut Squash Mac and Cheese with Bacon 8 Ounces of Elbow Macaroni 6 Slices of Center-Cut Bacon 1 Onion, chopped 5 Cups of Butternut Squash, cubed 3 1/2 Cups of Chicken Broth, divided 3/4 Cup of Low-Fat Milk 1 Teaspoon of Dry Mustard 1 Pinch of Nutmeg 1 Pinch of Salt, plus additional, to taste, divided 1 Pinch of Pepper, plus additional, to taste, divided 1 Cup of Parmesan cheese, grated 1 Cup of Sharp Cheddar Cheese, shredded, divided Chopped Parsley (optional) In a KitchenAid Evergreen Design Series 6-Quart Ceramic Stockpot, cook the Macaroni Noodles according to the package’s instructions. Set aside. In a KitchenAid Evergreen Design Series 5-Quart Ceramic Saute Pan, cook the Bacon until it is crispy. Chop them and set them aside. In the same pan, add the Chopped Onion and cook over low heat, stirring it occasionally, until the pieces are soft and lightly caramelized. Add the Butternut Squash cubes to the Onions along with 2 Cups of Chicken Broth. Cover them and bring them to a boil. Reduce the heat and cook it until the Squash is soft and most of the liquid is reduced. Pour the Squash and the onions into the bowl and add the Milk, the remaining Chicken Broth, the Dry Mustard, the Nutmeg and a pinch of the Salt and the Pepper. Using a KitchenAid Evergreen Design Series Tilt-Head Stand Mixer, puree the mixture until it is smooth and creamy. Pour the pureed sauce into a saute pan. Over low heat, add the Parmesan Cheese and 3/4 Cup of Sharp Cheddar Cheese a little at a time, stirring constantly. Add the Noodles and stir it well. Add the Salt and the Pepper, to taste. Top it with the Chopped Bacon, the remaining Cheese and the Chopped Parsley, if desired. Previous Next

Ann Storck Center Expands Its Services With Three New Programs South Florida Sun Times Mar 13, 2025 Ann Storck Center (ASC) – a Fort Lauderdale-based private NonProfit Organization dedicated to enriching lives of children and adults with intellectual and developmental disabilities – is proud to announce it has expanded its services with three new programs: Supported Training and Employment Program (STEP), In-Home Respite and Family Strengthening. ASC accommodates 96 permanent residents and serves more than 300 clients daily through an array of critical care, learning and ability-focused programs. Throughout all its programs and services, the Center intends for individuals to discover ability and build independence so that individuals live happier, more independent, fulfilling lives. Aligned with Developmental Disabilities Awareness Month, observed annually in March, ASC continues its mission to bring people of all abilities into a supportive community where each is inspired to realize a fulfilling life of purpose, possibility and love. The month-long observance champions individuals with developmental disabilities for their achievements, advocates for their rights and promotes understanding and inclusivity within society. Developmental disabilities are defined as impairments in physical, learning, language or behavior areas, and include: Autism Spectrum Disorders; Cerebral Palsy; Attention-Deficit/Hyperactivity Disorder (ADHD); learning or intellectual disabilities; hearing loss; vision impairment and other developmental delays. ASC opened the doors to its brand-new Supported Training and Employment Program (STEP). This program is designed to give young adults with disabilities, aged 15-21, the opportunity to get a step up in their adult life. STEP offers its participants the chance to explore career paths, learn about community service, gain social and employability skills, receive individualized support, participate in non-school day activities including field trips and afterschool programs and take paid summer internships. STEP is a year-round program offered Monday through Thursday. ASC believes families need an opportunity to take a much-needed break from caregiving with support. ASC’s new In-Home Respite program is designed to provide temporary at-home care by trained professionals who specialize in the individualized needs of each child they serve. Eligible families can receive up to 200 hours of care from ASC’s professional caregivers. Families can expect safe and nurturing care in their own home by trained professionals who cater to the individual needs of each child through specialized care and engaging activities. ASC introduced its new Family Strengthening Program to families in the community with children born through 12 with special needs. The goal of the program is to empower parents to enhance their positive parenting abilities, discipline techniques and teaching methods. This program offers insight into coping strategies for reducing behaviors and stressors, addressing the expectations and fears associated with raising children with special needs, including in-home services, group sessions, case management and financial assistance. Travel professionals with AAA – The Auto Club Group say cruise lines saw record breaking booking days last year, and that trend has carried into 2024. “We’ve seen cruise ships already sell out of suites and cabins with balconies for various spring and summer itineraries,” said Debbie Haas, Vice President of Travel for AAA – The Auto Club Group. “Travel demand is off to a strong start, which means availability will continue to shrink in the next couple of months. So, if you want a specific itinerary, ship, or cabin type, act fast or you’ll have to start planning for next year instead.” Best Time to Book a Cruise The first three months of the year are referred to as “wave season.” AAA says this is the best time to book a cruise, because cruise lines offer a wide range of discounts that can vary from 30-60% discounted pricing, cabin upgrades, BOGOs, on-board credits, pre-paid gratuities, and drink packages. The Iconic Musical Will Run At The William G. Skaff Center In West Palm Beach From Thursday, June 19th – Sunday, June 29th. The first musical by Tim Rice and Andrew Lloyd Webber to be produced for the professional stage, Jesus Christ Superstar has wowed audiences for over 50 years. A timeless work, the rock opera is set against the backdrop of an extraordinary and universally known series of events but seen, unusually, through the eyes of Judas Iscariot. Loosely based on the Gospels of Matthew, Mark, Luke and John, Superstar follows the last week of Jesus Christ’s life. The story, told entirely through song, explores the personal relationships and struggles between Jesus, Judas, Mary Magdalene, his disciples, his followers, and the Roman Empire. The beloved score contains such well-known numbers as “Superstar,” “I Don’t Know How to Love Him,” and “Gethsemane.” Director Matthew Farmer has cast Jacob Perry as Jesus, Elijah Rey as Judas Escariot, Anneliese Wolfanger as Mary, John Douglas as Peter, Brian Piedra as Simon, Aaron Fantacone as Annas, Chase Stante as Caiaphus, Greg Halmos as Pontius Pilate, and Carlo Sabusap as Herod. In 2003, Officer Cameron became employed with Golden Beach PD and in 2006, the Hallandale Beach Police Department welcomed him with open arms. For the past 15 years, Officer Cameron has been dedicated to the Uniformed Patrol Division and trained new hires as a Field Training Officer. Officer Cameron was also a member of the Marine Patrol. Among her businesses are the Deerfield Beach Café, which she received through the RFP Award of the Pier Restaurant, an honor for which Toula is grateful. She is the owner of the Flashback Diner Chain, with three locations in Boca Raton, Davie and Hallandale Beach. Flashback Diner has been named one of Florida’s top restaurants for over 30 years. Toula, daughter of a Greek emigrant family, began waitressing when she was 17 at LUMS Restaurant, where the first unit of the original Flashback Diner is currently located in Hallandale Beach. Through hard work and determination, Toula later bought the LUMS Restaurant she was working at and opened it in 1990, as the first Flashback Diner location in Hallandale Beach. Toula credits her success to the efforts of all the good people who helped her achieve her dreams. The FLRA and NRA must help Restaurateurs that they represent to increase the tip credit accordingly, as now servers have greater income than the managers while the cooks and dishwashers work just as hard and the income distribution for restaurant workers is unfair. We also need the SBA to develop specialized programs for the Restaurant Industry. An incentive to Banks to start loaning to Restaurants again, through guarantees of those loans and incentives to the Lending Institutions: Banks would rather stay away from lending to Restaurants in a Post-Pandemic World and we are in an industry the Nation needs very much for the jobs we create. In the development of our cities, we must find common ground between Landowners, Developers, Politicians and City Government. I understand all sides, the developer’s and the landowner’s but most importantly, I understand the diversity and needs of the Community. Stay Healthy, Sunshine: Mental Health & COVID-19 Resources For The New School Year September 1, 2022 Share As schools open across Florida, it’s important for parents, teachers and adults who work with children to stay aware of the ongoing effects of COVID-19 on youth mental health. Many people have struggled with their mental health during the COVID-19 Pandemic, children and teens are no exception. Pre-Pandemic mental health symptoms were already significantly on the rise among our nation’s youth and the COVID-19 Crisis has only escalated the issue. The Health Council of Southeast Florida is bringing awareness to the public that numerous resources exist to help families have an important conversation or find assistance for mental health and wellness. A new interactive and supportive tool for kids is the CDC’s How Right Now Online Guide: https://www.cdc.gov/howrightnow/index.html and helps kids identify how they’re feeling at any given moment and points them to additional resources for handling emotions like fear, grief, anger and sadness. “We want people to know they are not alone in experiencing changes to their mental health or seeing worrisome changes in their children. The important thing is to remember there is help all around. Early intervention gives young people and the adults in their lives the right tools to cope and heal from the current anxieties and traumas they are suffering,” says Andrea Stephenson, Chief Executive Officer for the Health Council of Southeast Florida and sponsor of Florida’s Local Health Councils’ COVID-19 Community Awareness Campaign, “Stay Healthy, Sunshine.” Ms. Stephenson noted to consult your child’s pediatrician, school counselor and local children’s mental health centers for expert guidance and support. Numerous free online resources exist such as those offered by the CDC and the National Association of School Psychologists, which created their supportive site “Helping children cope with changes resulting from COVID-19” at: www.nasponline.org Along with promoting mental health and wellbeing, “Stay Healthy, Sunshine,” encourages continuous health education and Vaccination as “your brightest bet” to proactively reduce the risk of severe health symptoms and hospitalizations that have occurred in Unvaccinated patients. In addition to buying pencils, notebooks and putting school clothes in order, getting kids Vaccinated against COVID-19 is an essential step for getting back into the classroom. All children 6 months and older are eligible for COVID-19 Vaccines, children ages 5 and older who have already been Vaccinated are eligible for a Booster for continued protection. “Being in school, interacting with other students and teachers and participating in extracurricular activities are important to the overall well-being of kids,” said Dr. Kenneth Alexander, Chief of Infectious Diseases at Nemours Children’s Health in Orlando, Florida. “Vaccinations are the best way to protect kids of all ages from COVID-19 and the best way to make sure they stay engaged in the classroom and activities they need and enjoy.” Parents should know that getting children Vaccinated will: • Protect their child. Getting Vaccinated can keep children from missing out on the fun of childhood—like sleepovers, birthday parties, sporting events and more. As children get back to the classroom, they may be exposed to COVID-19 more often. Parents can consider providing their child a comfortable, well-fitting mask to wear for additional protection. Parents should also keep kids home and get them tested if they have symptoms of COVID-19 or have been exposed to someone who tested positive. Vaccines are available at no cost to everyone aged 6 months or older living in the United States, no matter their immigration or health insurance status.
