Homemade Pumpkin Ravioli with White Wine and Herb Butter Sauce

Servings: 4
Ravioli:
1 Can of 15 ounces of Pumpkin Puree
1 Large Egg, lightly beaten
1/3 Cup of grated Pecorino Romano cheese, plus additional for serving (optional)
2 Tablespoons of Plain Dried Breadcrumbs
2 Teaspoons of Sugar
1/4 Teaspoon of Salt
1 Pinch of Ground Nutmeg
48 Round Dumpling Wrappers
Water
Sauce:
6 Tablespoons of Cold Unsalted Butter, divided
1/3 Cup of Chopped Shallots
2/3 Cup of Dry White Wine
3 Tablespoons of Heavy Cream
2 Tablespoons of Chopped Fresh Sage
1 Tablespoon of Chopped Fresh Chives
1/4 Teaspoon of Salt
To make the Raviolis: Line the fine mesh sieve with a dampened cheesecloth. Add the Pumpkin Puree and strain it for 1 hour. Transfer it to a bowl and stir in the Egg, the Cheese, the Breadcrumbs, the Sugar, the Salt and the Nutmeg.
Arrange six dumpling wrappers on the work surface in a single layer. Place 1 Tablespoon of the Pumpkin Mixture in the center of each one and brush the edges with Water. Place a second wrapper over filling, carefully pushing out any air bubbles then pressing the edges to seal them.
Transfer the Raviolis to a baking sheet covered with parchment paper. Place a sheet of plastic wrap over the Raviolis. Repeat with the remaining wrappers and filling.
In a KitchenAid Evergreen Design Series 6-Quart Ceramic Stockpot over medium heat, bring the Salted Water to a gentle simmer.
To make sauce: In a KitchenAid Evergreen Design Series 3-Quart Ceramic Saucepan over medium-high heat, melt 1 Tablespoon of Butter. Add the Shallots and cook them, stirring them occasionally, for about 1 minute. Add the wine and bring it to a boil, then cook it until the mixture resembles wet sand, for about 8 - 9 minutes.
Reduce the heat to medium-low and whisk in the remaining Butter and the Heavy Cream until melted. Stir in the Sage, the Chives and the Salt; keeping it warm and stirring it occasionally.
To cook the Raviolis, add half to the simmering Water and cook it, stirring it gently once or twice, 3 minutes. Remove them with the slotted spoon and divide it between two plates. Add remaining the Raviolis to the pot and repeat the process, dividing it between the remaining plates. Spoon the Sauce over the Raviolis and serve them with additional Grated Cheese, if desired.
Butternut Squash Mac and Cheese with Bacon
8 Ounces of Elbow Macaroni
6 Slices of Center-Cut Bacon
1 Onion, chopped
5 Cups of Butternut Squash, cubed
3 1/2 Cups of Chicken Broth, divided
3/4 Cup of Low-Fat Milk
1 Teaspoon of Dry Mustard
1 Pinch of Nutmeg
1 Pinch of Salt, plus additional, to taste, divided
1 Pinch of Pepper, plus additional, to taste, divided
1 Cup of Parmesan cheese, grated
1 Cup of Sharp Cheddar Cheese, shredded, divided
Chopped Parsley (optional)
In a KitchenAid Evergreen Design Series 6-Quart Ceramic Stockpot, cook the Macaroni Noodles according to the package’s instructions. Set aside.
In a KitchenAid Evergreen Design Series 5-Quart Ceramic Saute Pan, cook the Bacon until it is crispy. Chop them and set them aside.
In the same pan, add the Chopped Onion and cook over low heat, stirring it occasionally, until the pieces are soft and lightly caramelized.
Add the Butternut Squash cubes to the Onions along with 2 Cups of Chicken Broth. Cover them and bring them to a boil. Reduce the heat and cook it until the Squash is soft and most of the liquid is reduced.
Pour the Squash and the onions into the bowl and add the Milk, the remaining Chicken Broth, the Dry Mustard, the Nutmeg and a pinch of the Salt and the Pepper. Using a KitchenAid Evergreen Design Series Tilt-Head Stand Mixer, puree the mixture until it is smooth and creamy.
Pour the pureed sauce into a saute pan. Over low heat, add the Parmesan Cheese and 3/4 Cup of Sharp Cheddar Cheese a little at a time, stirring constantly. Add the Noodles and stir it well.
Add the Salt and the Pepper, to taste. Top it with the Chopped Bacon, the remaining Cheese and the Chopped Parsley, if desired.
