Sheet Pan Pancakes

Cook time: 5 minutes

Servings: 6


Nonstick cooking spray

1 1/2 Cups of all-purpose flour

3 1/2 Teaspoons of baking powder

1 Tablespoon of sugar

1 Teaspoon of salt

1 1/4 Cups of milk

1 Large egg

2 Tablespoons of unsalted butter, melted

1/2 Cup of sliced strawberries

1/4 Cup of blueberries

1/4 Cup of mini chocolate chips


Preheat the oven to 425 F. Cover the baking sheet with parchment paper and spray it with nonstick cooking spray. Set aside.


In a large bowl, mix the flour, the baking powder, the sugar and the salt. Add the milk, egg and melted butter; mix until it is smooth.


Pour the batter onto a prepared baking sheet and smooth it into an even layer that covers the pan. Top it with the strawberries, the blueberries and the chocolate chips.


Bake for 5-7 minutes, or until cooked and golden brown. Let it cool slightly before cutting it into squares.



Healthy Sausage Breakfast Muffins

Cook time: 23 minutes

Servings: 12


Nonstick cooking spray

1 Onion, diced

1 Pound of turkey sausage

4 Eggs

1/2 Cup of shredded cheddar cheese

1 Cup of protein pancake mix


Preheat the oven to 350 F.


Spray a 12-cup muffin pan with nonstick cooking spray; set aside.


Spray the large skillet with the nonstick cooking spray.


In a prepared skillet over medium heat, cook the onion until it is translucent. Add the turkey sausage and cook it until it is no longer pink. Remove from the heat.


In a large mixing bowl, lightly beat the eggs. Add the shredded cheese, the pancake mix and the sausage and onion mixture; mix well.


Fill the prepared muffin cups about 3/4 full with mixture.


Bake for 18-20 minutes, or until golden brown on top.
