Celebrate Father’s Day With A Burger Bash: At Arc Culinary's Emeril Lagasse Foundation Innovation Kitchen in Broward May 30, 2024 Share A Burger Bash in time for Father’s Day weekend and a culinary tour of Europe without the need for a passport are among the unique South Florida summer dining experiences presented in June and July by Arc Culinary at the state-of-the-art Emeril Lagasse Foundation Innovation Kitchen in Sunrise. The mouth-watering lineup of multi-course, prix-fix chef experiences kicks off in time for Father’s Day weekend with Burger Bash on Saturday, June 15 at 7 p.m., featuring a sesame-marinated salmon burger with grilled onions and spicy Asian mango slaw on a house-made sesame bun; brisket and Boston butt on a sweet Hawaiian roll with special sauce and shoestring potatoes; a smash burger with grass-fed beef, marinated and caramelized onions, shitake and portobello mushrooms, provolone cheese and black truffle aioli on a brioche bun, served with SIDEWINDERS™ fries; and rocky road semifreddo for dessert. Taste of the Mediterranean on Thursday, June 27 at 7 p.m. will dive into the diverse culinary traditions of the countries surrounding the Mediterranean Sea, beginning with a cold orzo salad with Kalamata olives, English cucumbers, red onions, toasted chickpeas, chiffonade of fresh basil and spinach, feta cheese and roasted red peppers; followed by Mediterranean baked cod with tomatoes, red onions and capers serve with lemon wedge potatoes; grilled lamb chops with mint, tomato and feta quinoa; and a special dessert to complete the meal. Spanish Tapas Night on Friday, July 12 at 7 p.m. will highlight the regional diversity of Spain with a menu of six small plates, including serrano ham and Manchego cheese served with black garlic toast points and mixed Spanish olives; Spain’s national dish, tortilla Espanola, a classic Spanish omelet with potatoes, onions and Spanish spices; Spanish meatballs made with a blend of beef and pork in a tomato-based sauce; jumbo shrimps in garlic sauce; Navarra region piquillo peppers stuffed with cod fish, vegetables and Spanish spices; and a final dessert course. Fresh Summer Flavors on Friday, July 26 at 7 p.m. will capture the essence of the season with four courses highlighted by a fresh summer salad of baby spinach, mint, cilantro, orange wedges, red onions, grape tomatoes, marinated strawberries, fresh avocado, English cucumbers, watermelon radish, mango chunks with lime and local Florida honey; fried Caribbean-style Florida red snapper in a tomato-based creole sauce with fried plantains and pickled red onions; and an additional course before ending with an elevated strawberry shortcake for dessert. Arc Culinary's Emeril Lagasse Foundation Innovation Kitchen, located in Sunrise, offers a blend of mid-century classic and modern elegance, featuring a Chef’s Table, refined décor, and an outdoor patio. Beyond Chef Experiences, the venue hosts cooking classes, private events, and provides off-site catering. Arc Culinary and Arc Educates are revenue-generating social enterprises of Arc Broward that directly support programming for 1,200 children and adults with disabilities. Happy Holidays: My Reflection Of My Trip To Cuba By Hallandale Beach Mayor, Joy Cooper December 25, 2024 Share Recently, my husband and I had the opportunity to travel alongside thirty-two participants to support the Jewish people of Cuba. Jewish Federation of Miami sponsored the trip. At first, I had mixed emotions about going but after considering we may not ever have the chance to go in the future, it was to show solidarity with our fellow Jews living under Communist Dictatorship that we attended. The four-day trip to Havana made a profound impact on me in a way I would never have imagined. On my return home, I deliberated whether I would write about the trip. Many of my friends shared their concerns about me becoming a target since I am an elected official and now have even stronger views on the Cuban Communist government. I also had mixed emotions on how my Cuban friends would view my trip. I will share that I now have an even deeper understanding and respect of the opposition I have heard against entering business with Cuba. I understand the pain and suffering many endured leaving the country they loved and more importantly their families. I did not want to open wounds or have individuals judge my allegiance to fight for a free Cuba. If this article is offensive or painful I apologize. I almost did not write it at all until I was encouraged by the owner of Padrino’s. The irony of just returning from Cuba to attend the last ribbon cutting ceremony of the year at Hallandale Beach’s landmark Padrino’s Cuban Restaurant seemed like fate. Meeting the entire family and hearing their history there is an importance to sharing what is happening in Cuba now unfiltered. Americans are not allowed to visit Cuba for tourism. For a brief while under the Obama Administration Cuba was open, in 2015 reopened the Embassy. Our guide shared with us that during the time the embassy was reopened there was an excitement Americans would finally be able to visit and more importantly their Cuban family members and friends. Since the trade embargos have been strengthened and Trump in his first term made them stronger due to Terrorism and their relations with Iran and North Korea. Just this week there were protests in Cuba blaming their economic conditions on the U.S. sanctions that were put in place in the 1960’s. Many of their Communist counterparts have reduced their exports to Cuba due to their own economic situations. Venezuela has stopped shipping much needed oil to Cuba impacting their energy plants. The propaganda I have now seen firsthand. In reports of the incident the million plus protesters reported by Cuba could not be confirmed. I have been to that location and 1,000 to 2,000 people could fit in that area. During the days up to our trip there was a major failure of the main power plant in Havana. We were assuring that “tourism” is one of the main income producing sectors for the country and all the areas we would be going to were up and running. We boarded our plane and left at 9:30 on the one-hour flight. Looking out the window of the plane I thought how true the statement “going back in time,” was so true. The landing strip was safe but was old and cracked and grass and weeds were shocking to see. The Jose Marti Airport was built in 1930 and has not changed much according to individuals I spoke with. The people greeting us and all the service workers were amazing. They have immigration checkpoints where everything went smoothly. We all had to say we were writing “to support the people of Cuba” As a note we were all told only to bring cash in the form of twenty’s, ten’s and 5-dollar bills. They do not accept credit cards. We boarded the bus and were greeted by our tour guide Alexis, bus driver and Batia, a Cuban American from the tour company in NYC. Ironically Batia turned out to own a part time residence at the Parker Dorado here in Hallandale Beach. Our first stop was Revolution Square. Our journey began where Castro gave his first speech televised throughout the world on his successful invasion and control of the Government from Batista’s. Batista was a cruel and brutal dictator. The Square was designed in the 1938 competition which is the largest state in the world dedicated to writer Jose Marti. It was not actually built until the fifties when Batista seized power in 1952. It was completed in 1958 and was meant to be called the Civic Square with its main statue of Jose Marti who is still revered by many of the Cuban people as the Father of the Country. Castro renamed it after his coupe. Tragically the large area is surrounded by many government buildings that used to house the Department of Tourism, Department of the Interior, and others like the U.S. is in front of what was the parliament until the invasion when it became Castro’s Home. The area was desolate with people except for a row of old cars that visitors could hire for a drive around the city. All that has changed. The one main building that housed the Department of Interior became the spot of their intelligence Agency. It is their location to control everything and everyone. It is famous as it has one of the most famous and most produced murals of Che Guevara. The area left me with the thought of what it was like before oppressive dictators and communism. When it was a place for art control and the gateway to America. We would soon find out simply what Jose Marti meant when he wrote Socialism will be the prison of people. He was the Father of Cuba; he wrote and fought for Cuba’s freedom from Spain. He wrote against Karl Marx and supported an ideology of shared responsibility and freedom for families to produce wealth. We got back on the bus and traveled through the city. It was then we would truly see the failure of Communism. I will continue with my reflection of Cuba next week. While these moments can be stressful, the silver lining of the evening is when everyone pauses to enjoy a perfectly cooked family dinner together. From tough homework assignments and Soccer practice to getting everyone tucked into bed, the days can seem long, but those special moments make cooking a memorable meal worthwhile. When life gets busy, you need a family recipe that is quick to make, easy to bake and mouthwatering to eat, such as a casserole. Try this recipe for Stuffed Bell Pepper Casserole next time you are in a pinch. It’s made with hearty Ground Turkey Breast, delicious Bell Peppers, Crushed Tomatoes and Brown Rice then topped with gooey Sharp Cheddar Cheese. This short ingredient list makes it easy to assemble. Brown the Turkey and the Onions then combine all the ingredients, in a layered fashion, in a baking dish. It’s simple to prepare before baking to perfection. It’s just right for little ones who are hungry and ready for a wholesome and appetizing home-cooked meal. Adults enjoy the natural flavors and fresh ingredients that keep all ages happy and content. Stuffed Bell Pepper Casserole Servings: 4 • 20 Ounces of Ground Turkey Breast • 1 Yellow Onion, chopped • 1/4 Teaspoon of Salt • 1/4 Teaspoon of Pepper • 3 Large Bell Peppers, chopped (1 each red, yellow and green) • 1 28 Ounce Can of Crushed Tomatoes • 1/2 Cup of Long-Grain Brown Rice • 1 Teaspoon of Oregano • 1/2 Teaspoon of Garlic Powder • 8 Ounces of Shredded Sharp Cheddar Cheese Heat the oven to 350 F. In a large skillet over medium heat, add the Turkey, the Onions, the Salt and the Pepper. Break up the Turkey and cook until they are browned. Add the Turkey Mixture to a 9-by-13-inch baking dish. Add the Bell Peppers, the Crushed Tomatoes, the Brown Rice, the Oregano and the Garlic Powder. Mix everything until it is combined. Cover it with aluminum foil. Bake for 80-90 minutes until the Rice is tender. Remove the foil, add the Shredded Cheese and bake it for 5 minutes until the Cheese is melted. Bacon Cheeseburger Casserole For another comfort food option made easy try this Bacon Cheeseburger Casserole, it's loaded with Ground Turkey, Bacon and Vegetables in a Creamy Sauce topped with Tater Tots and Cheese. This slow cooker recipe is sure to be a smash hit. It's simple; just mix the ingredients together and let the slow cooker do the heavy lifting. Bacon Cheeseburger Casserole Recipe adapted from "Julie's Eats and Treats" Servings: 5 • 1 Pound of Lean Ground Turkey • 5 Bacon Strips, diced • 1/2 Small Onion, diced • 2 Cloves of Garlic, minced • 3 Tablespoons of All-Purpose Flour • 1 1/2 Cups of Milk • 1/2 Tablespoon of Worcestershire Sauce • 1 Dash of Hot Sauce • 1 1/2 Cups of Cheddar Cheese, plus additional for topping (optional), divided • 1 6-8 Ounce Bag of Frozen Mixed Vegetables • 2 Tablespoons of Sour Cream • Nonstick Cooking Spray • 1 16 Ounce bag of Frozen Tater Tots • Salt, to taste • Pepper, to taste In a large skillet over medium heat, brown the Ground Turkey, the Bacon, the Onion and the Garlic until the Turkey is no longer pink. Sprinkle the Flour over the Turkey and stir well to combine. Stir in the Milk, the Worcestershire Sauce and the Hot Sauce. Cook 2-3 minutes, or until thickened. Remove from heat and stir in the Cheddar Cheese, the Frozen Vegetables and the Sour Cream. Spray the slow cooker with the Non Stick Spray. Place some of the Tater Tots in the bottom of the slow cooker. Pour the Meat Gravy over the Tater Tots. Arrange the remaining Tater Tots on top. Cover and cook it on low for 3-3 1/2 hours. During the last 10 minutes of cooking, sprinkle it with the extra Cheddar Cheese, if desired. Cover it and finish cooking it. A Better-For-You Mac And Cheese Macaroni and Cheese is a beloved comfort food that's easy to make during a busy week. With just a few extra ingredients and steps, you can turn Boxed Mac and Cheese into a filling dinner. To make this Taco Mac and Cheese, simply prepare your favorite Boxed Mac and Cheese according to the package’s instructions and stir fry the Meat and the Vegetables together. (Hint: You can even chop the Vegetables the night before to make cooking the next day even easier.) Then add the Taco Seasoning and combine it for a better-for-you take on a classic dish. Taco Mac and Cheese Casserole • 1 Box of Macaroni and Cheese • 1/4 Cup of Milk • 4 Tablespoons of Butter • 1 Pound of Ground Turkey • 1 Red Bell Pepper, diced • 1 Yellow Bell Pepper, diced • 1 Orange Bell Pepper, diced • 1 Onion, diced • 2 Teaspoons of Taco Seasoning Prepare the Boxed Mac and Cheese with the Milk and the Butter according to the package’s instructions. In a skillet, brown the Ground Turkey over medium heat. Add the Bell Peppers and the Onion and then add the Taco Seasoning. Stir the Turkey Mixture with the Mac and Cheese to combine it. You can serve it in your favorite individual serving size bowl or place it in a casserole dish for everyone to help themselves. Either way it's a sure hit!
