Kale and Kimchi "Fried" Rice
Prep Time: 2 minutes
Cook Time: 3 minutes
Servings: 1

• 1 Minute Jasmine Rice and Red Quinoa Cup
• 1 Cup of Kale, chopped
• 1/4 Cup of Kimchi, chopped
• 1 Teaspoon of Soy Sauce
• 1 Egg, lightly beaten

Heat the Rice according to the package’s directions.

In a medium microwave-safe bowl, combine the Kale, the Kimchi and the Soy Sauce. Cover it and microwave it for 1 minute.

Add the Rice and the Egg; mix it well to combine it, cover it and microwave it for another 30 seconds, stir and serve it.

Serving Suggestions: Drizzle with the Sesame Oil and add cooked Shrimp.

Cook Time: 2 minutes

• 1 Minute Jalapeño Rice Cup
• 1 Egg, lightly beaten
• 2 Tablespoons of Salsa
• 2 Tablespoons of Queso Fresco

Heat the Rice according to the package’s directions.

In a small microwave-safe dish, combine the Egg, the Salsa and the Rice.

Microwave it for 1 minute. Stir in the cheese and microwave it for another 30 seconds.

Serving Suggestion: For a meal to go, wrap the scramble in a warm Tortilla.
