Sheet Pan Cajun Shrimp Fajitas with Bell Pepper, Onion and Spicy Ranch

Servings: 4
• 2 Green Bell Peppers
• 2 Yellow Bell Peppers
• 1 Lime
• 1 Medium Red Onion
• 2 Tablespoons of Extra-Virgin Olive Oil
• 1 1/2 Pounds of Raw, Peeled Shrimp, Fresh or Frozen
• 5 Teaspoons of Cajun Seasoning, divided
• 1 Teaspoon of Salt
• 1/2 Cup of Ranch Dressing
• 12 Small Flour Tortillas
Preheat the oven to 450 F.
Wash and dry the Green Bell Peppers, the Yellow Bell Peppers and the Lime.
Trim, seed and slice the Bell Peppers lengthwise into thin strips; transfer them to a large baking sheet.
Peel, halve and slice the Onion lengthwise into thin pieces; add them to a baking sheet with Bell Peppers.
Drizzle the Veggies with the Oil, toss to combine and spread in an even layer. Bake until the Veggies have softened slightly, about 5 minutes.
If using Frozen Shrimp, place them in a colander and run them under cold water to thaw them slightly. Place the Shrimp on a clean towel or paper towels and pat dry.
Remove the baking sheet from the oven. Arrange the Shrimp over the Veggies then sprinkle them with 4 Teaspoons of Cajun Seasoning and Salt; toss to combine and spread in an even layer.
Bake until the Veggies are tender and Shrimp are cooked through, 5-7 minutes. Remove them from the oven.
Cut the Lime into wedges.
In a small bowl, stir the Ranch Dressing and the remaining Cajun Seasoning.
Warm the Tortillas in a skillet, oven or microwave, if desired.
Divide the Tortillas between plates and fill them with the Shrimp and the Veggies; drizzle them with the Spicy Ranch and serve them with a squeeze of Lime.
Cheese Tortellini and Cauliflower with Creamy Spinach Marinara

• 2 - 10 Ounce Bags of Cauliflower Florets
• 18 Ounces of Cheese Tortellini, Fresh or Frozen
• 1/2 Tablespoon of Salt
• 1 - 24 Ounce Jar of Marinara Sauce
• 8 Fluid Ounces of Heavy Whipping Cream
• 1/2 Teaspoon of Basil, dried
• 1/4 Teaspoon of Black Pepper
• 2 - 5 Ounces Packages of Baby Spinach
Fill a large pot halfway with hot water, cover it and bring it to a boil. Uncover it then add the Cauliflower, the Tortellini and the Salt; stir for a few seconds. Cook, stirring occasionally, until just tender, about 5 minutes, or cook according to the package’s instructions.
In a separate large pot over medium heat, stir the Marinara Sauce, the Cream, the Basil and the Black Pepper to combine and bring the Marinara Sauce to a simmer. Once simmering, reduce the heat to medium-low and cook it until it is slightly thickened, 3-4 minutes.
Wash and dry the Spinach.
When the Marinara Sauce has thickened, add the Spinach to the pot in handfuls, waiting for the Spinach to wilt slightly before adding the next handful. Remove from the heat and cover it to keep it warm.
When the Cauliflower and the Tortellini are done, drain and add to the pot with the Creamy Marinara Sauce; stir to combine.
To serve, divide the Pasta between plates or bowls.
Garlic-Parmesan Chicken Tenders with Green Beans and Honey Mustard Dip

• 2 Tablespoons of Extra-Virgin Olive Oil, divided
• 1/4 Cup of Mayonnaise
• 1 Teaspoon of Garlic Powder
• 1 Teaspoon of Salt, divided
• 2/3 Cup of Parmesan Cheese, shredded
• 1/2 Cup of Panko Breadcrumbs
• 1/2 Teaspoon of Paprika
• 1 1/2 Pounds of Boneless, Skinless Chicken Breasts
• 1 1/2 Pounds of Green Beans
• 1/2 Cup of Honey Mustard Dressing
Preheat the oven to 450 F. Coat a baking sheet with 2 Teaspoons of Oil.
In a medium bowl, stir the Mayo, the Garlic Powder and a 1/2 Teaspoon of Salt to combine.
In a separate medium bowl, stir the Parmesan, the Breadcrumbs and the Paprika to combine.
Pat the Chicken dry with paper towels and slice into 3/4-inch Chicken Tenders. Add to a bowl with the Mayo Mixture and toss to coat.
Working in batches, dredge the Chicken Tenders in the Breadcrumb Coating, pressing to adhere. Transfer to a baking sheet.
Bake them until the Chicken Tenders start to turn golden, about 10 minutes.
On a clean cutting board, wash, dry and trim the Green Beans and Set them aside.
When the chicken is golden, flip and bake it until it is cooked through for 6-8 minutes and remove it from the oven.
Preheat a large skillet over medium-high heat.
Add the remaining Oil and swirl it to coat the bottom. Add the Green Beans and the remaining Salt; cook, stirring it occasionally, until it is tender-crisp for 4-5 minutes and remove it from the heat.
Divide the Chicken Tenders and the Green Beans between the plates. Serve them with the Dressing for dipping.
