Caprese Skewers

Prep time: 15 minutes
Yield: 12 skewers
2 Tablespoons of Extra-Virgin Olive Oil
1 Teaspoon of Italian Seasoning
1/3 Teaspoon of Cracked Red Pepper Flakes
1/8 Teaspoon of Garlic Powder
1/8 Teaspoon of Kosher Salt
12 Mozzarella Balls, drained and patted dry
24 Ounces of NatureSweet Constellation Tomatoes
24 Small Fresh Basil Leaves
1/4 Cup of Balsamic Glaze (optional)
In a small bowl, whisk the Olive Oil, the Italian Seasoning, the Cracked Red Pepper Flakes, the Garlic Powder and the Salt.
Add the Mozzarella Balls. Gently toss to coat. For best flavor, marinate them in the fridge overnight.
To assemble the skewers: Thread the Tomato, the folded Basil Leaf, the marinated Mozzarella Ball, another folded Basil Leaf and another Tomato. Repeat to make the 12 skewers.
Place them on a serving platter. If desired, drizzle the Balsamic Glaze over the skewers on a serving platter.
Bruschetta Bagels
Prep time: 1 hour, 20 minutes
Yield: 8 bagels
Bagels:
1 Packet of Dry Yeast
1 Tablespoon of Sugar
1 1/4 Cups of lukewarm Water, divided
3 1/2 Cups of Flour
1 Teaspoon of Salt
Sesame Seeds
Bruschetta:
2 Cups of NatureSweet Glorys Cherry Tomatoes
1/4 Cup of Olive Oil
2 Cloves of Garlic
1/2 Cup of Basil
Topping:
1 Cup of Goat Cheese
1/4 Cup of Balsamic Vinegar
Salt, to taste
Pepper, to taste
To make the Bagels: In a bowl, mix the Yeast, the Sugar and 1/2 Cup of lukewarm Water; let it rest for 5 minutes.
In a separate large bowl, place the Flour and add the Yeast mixture, the remaining lukewarm Water and the Salt. Mix thoroughly with your hands until a Homogenous mixture is obtained. Transfer it to a greased bowl, cover it with plastic wrap and let it rise for 1 hour.
Once the dough rises, place it on a flat surface and divide it into eight equal parts. Form the small Dough Balls and, using your finger, make a hole in the center of each one to form the Bagels. Place them on a baking sheet, cover them with a kitchen towel and let them rise for 15 minutes.
Preheat the oven to 390 F.
In a pot of hot water over medium heat, cook each Bagel for 5 seconds, making sure they do not stick to each other. Remove them from the Water and drain them thoroughly. Place them on a parchment paper-lined plate, sprinkle them with Sesame Seeds and bake them for 25 minutes.
To make the Bruschetta: On a cutting board, use a knife to cut the Tomatoes in half. Transfer them to a bowl; add the Olive Oil, the Garlic and the Basil then mix. Set aside.
To make the topping and serve: Cut the Bagels in half, placing them on a cutting board and use a knife to spread the Goat Cheese on each Bagel half. Add the Bruschetta and drops of the Balsamic Vinegar then sprinkle with the Salt and the Pepper, to taste.
