The evening begins with a first course trio, intricately designed to awaken the palate: a Roasted Black Sesame Tartlet filled with beef tartare, kimchi, and shiso; a Wonton Tartlet layered with koji corn puree, seasoned baby heirloom tomatoes, corn silks, and pimento powder; and a Raw Oyster finished with turmeric mignonette, ginger, carrot, and black garlic mayu oil. Next, the popular Japanese Milk Bread, served warm with house-cultured butter, smoked shoyu–ume honey reduction, and Maldon salt – a comforting yet refined interlude. For the third course, the Shiro Ponzu Crudo, showcasing a local catch accented with Makrut-raspberry gel, fresh seaweed, and yuzu oil, and for the fourth, Braised Short Rib Dumplings, delicately folded and served with Doubanjiang shoyu, chili crunch, and microgreens.
For the main course, two standout entrées are available, each artfully composed and rooted in depth of flavor. The first, a Seared Local Fish, is paired with porcini and shiitake mushrooms, draped in umami-rich kombu oil, and accompanied by smoked fish bone dashi congee. A turnip and amazake purée, along with purple daikon dressed in yuzu vinaigrette and yuzu oil, provide vibrant contrast and balance. Alternatively, guests may indulge in Kaori’s signature Suya-Spiced Strip Loin, a show stopping dish that marries bold spice with sweetness. It’s served alongside a BBQ sweet plantain glazed with vanilla–miso, charred seasonal vegetables, guajillo oil, seasonal berry gel, and a vivid fermented pepper sauce. To cleanse the palate, a refreshing Kalamansi Sorbet – paired with a bright Kalamansi Pâte de Fruit – delivers a bright, citrus-driven transition into dessert. The experience concludes with a Mille-Feuille, featuring roasted white chocolate, candied and caramelized nori, smoked milk ice cream, and a silken caramelized white chocolate cream.
Each dish in the tasting menu reflects Chef Seth’s evolving culinary vision, with presentations and pairings that shift with the rhythm of the season. As such, the menu may vary slightly from night to night, offering returning guests something new to discover.
