Greek Beet and Watermelon Rice Salad

1 Bag of Success Jasmine Rice
1/4 Cup of Olive Oil
2 Tablespoons of Lemon Juice
1/4 Teaspoon of Salt
1/4 Teaspoon of Black Pepper
1 Cup of thinly sliced, cooked golden Beets
1 Cup of thinly sliced Watermelon
1/4 Cup of Feta Cheese, crumbled
1/4 Cup of Pitted Black Olives, halved
1/4 Cup of Red Onion, thinly sliced
1 Tablespoon of Fresh Mint, thinly sliced
2 Tablespoons of Walnuts, toasted and chopped, for garnish
Prepare the Rice according to the package’s directions. Allow the Rice to cool completely.
In a medium bowl, whisk the Oil, the Lemon Juice, the Salt and the Pepper.
Add the Rice to the bowl with the Dressing and stir it to combine. Let it stand for 5 minutes.

Prepare the Rice according to the package’s directions. Allow the Rice to cool completely.
In a medium bowl, combine the Corn, the Tomatoes, the Basil, the Red Onions, the Vinaigrette and the Green Onions. Fold in the Rice, the Salt and the Pepper.
Serve the salad at room temperature or chilled.
