Spicy Tuna Sushi Rice Cups:

Sushi Rice:
2 Cups of Sushi Rice, cooked
2 Tablespoons of Rice Vinegar
1 Tablespoon of Sugar
1 Teaspoon of Salt
Tuna Mixture:
1 5 Ounce Can of Bumble Bee Snackers Lemon Pepper
3-4 Tablespoons of Mayonnaise
1-2 Teaspoons of Sriracha, or to taste
1/2 Teaspoon of Soy Sauce
1/4 Teaspoon of Wasabi (optional)
Assembly:
Nori - Seaweed Sheets
Furikake Seasoning
Spicy Mayo or Sriracha, for topping
Wonton Crisps, for topping
Heat oven to 375 F.
To make the Sushi Rice: Mix the cooked Rice with the Rice Vinegar, the Sugar and the Salt. Let it cool slightly.
To make the Tuna Mixture: In a bowl, combine the Tuna (no draining needed), the Mayonnaise, the Sriracha, the Soy Sauce and the Wasabi, if desired. Mix well.
To assemble: Cut the Nori Sheets into squares and press them into the cups of a muffin tin to line them.
Fill each of the Nori-lined cups with the Sushi Rice, pressing gently to form them into small nest shapes.
Sprinkle the Furikake over the Rice then top them with a spoonful of the Tuna Mixture.
Bake them for 8-10 minutes until they are heated through and the edges are slightly crispy.
Remove the cups from the muffin tin, drizzle them with the Spicy Mayo or the Sriracha and top them with the Wonton Crisps.
