Simple Macaroons
Recipe adapted from: https://www.marthastewart.com/
Yield: 15 Macaroons

1 Large egg
2-1/4 Tablespoons of honey
1/4 Teaspoon of vanilla extract
grated lemon zest
1/4 Teaspoon of salt
1-1/4 Cups of shredded coconut
5 Ounces of dark, melted chocolate

Preheat the oven to 375˚ F.

In a bowl, whisk the egg. Add the honey, the vanilla, the lemon zest and the salt and whisk it again. Stir in the coconut until it is completely coated with the egg mixture.

Using a 1 1/2-inch ice cream scoop, make 15 balls, transferring each of them to a parchment-lined baking sheet, spacing them about 2 inches apart.

Bake the Macaroons for 10-12 minutes, rotating them halfway through, until the coconut starts to brown on the edges.

Transfer the sheet to the wire rack and let it cool.

Before serving the Macaroons, drizzle them with the melted chocolate or dip the bottom sides of the Macaroons in the melted chocolate to cover all of the bases. Refrigerate the Macaroons for 15 minutes for them to set.
