• Let the Steaks rest for a few minutes before serving.

Bacon-Wrapped Jalapeño Poppers

Ingredients:
• 12 Jalapeño Peppers
• 8 Ounces of Cream Cheese, softened
• 1 Cup of shredded Cheddar Cheese
• 12 Slices of Bacon, halved
• Toothpicks

Instructions:
• Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
• Cut the Jalapeños in half lengthwise and remove the Seeds and the Membranes.
• In a bowl, mix the Cream Cheese and the Cheddar Cheese until they are well combined.
• Spoon the cheese mixture into each Jalapeño half.
• Wrap each stuffed Jalapeño with a halved slice of Bacon and secure it with toothpicks.
• Place the Poppers on the prepared baking sheet and bake them for 20-25 minutes until the Bacon is crispy.

Grilled Key West Shrimp Skewers
Preparation time: 20 minutes
Cooking time: 10 minutes
Serves: 4

Ingredients:
• 1 Pound of Large Key West Shrimp, peeled and deveined
• 2 Tablespoons of Olive Oil
• 2 Cloves of Garlic, minced
• 1 Tablespoon of Fresh Lime Juice
• 1 Teaspoon of Paprika

• Place the Shrimp Skewers on the preheated grill and cook them for approximately 2-3 minutes per side, or until the Shrimps turn pink and opaque.

Grilled Citrus Mahi-Mahi

• Place the Mahi-Mahi Fillets in a shallow dish and pour the marinade over them. Let them marinate for 10 minutes.
• Grease the grill grates lightly with oil to prevent sticking.
• Place the marinated Mahi-Mahi Fillets on the grill and cook for approximately 5-6 minutes per side or until the fish flakes easily with a fork.
• Remove the Fillets from the grill and serve hot with a drizzle of fresh Lemon or Orange Juice. Garnish with Fresh Herbs, if desired.

Grilled Florida Lobster Tails
Preparation time: 15 minutes
Cooking time: 8-10 minutes
Serves: 2

Ingredients:
• 2 Florida Lobster Tails
• 4 Tablespoons of Butter, melted
• 2 Cloves of Garlic, minced
• 1 Tablespoon of fresh Lemon Juice
• 1 Tablespoon of chopped Fresh Parsley
• Salt and Pepper, to taste
• Lemon Wedges, for serving

Instructions:
• Preheat the grill to Medium-High Heat.
• Using kitchen shears, carefully cut through the top shell of the Lobster Tails, stopping at the Tail Fin. Gently pry the shell open, exposing the meat.
• In a small bowl, mix the melted Butter, the minced Garlic, the Lemon Juice, the chopped Parsley, the Salt, and the Pepper.
• Brush the Lobster Tails generously with the Butter mixture.
• Place the Lobster Tails on the grill, shell side down, and cook for 4-5 minutes.
• Flip the tails and continue grilling for another 4-5 minutes or until the meat is opaque and firm.
• Remove the Lobster Tails from the grill and serve hot with Lemon Wedges on the side.
