Cornish Game Hen with Kale Sweet Potato Salad
Prep time: 20 minutes
Cook time: 1 hour, 10 minutes
Servings: 4

• 1 Package, 6 Ounces of Stovetop Stuffing
• 2 Cups of chopped Apples, divided
• 4 Cornish Game Hens, 20 Ounces each
• 1/2 Cup of Butter
• 2 Teaspoons of Italian Seasoning, divided
• 1 Teaspoon of Paprika
• 1 Teaspoon of Salt, plus additional, to taste, divided
• 1/2 Teaspoon of Garlic Powder
• 1/4 Teaspoon of Black Pepper
• 2 Large Sweet Potatoes, peeled, cut into 1-inch cubes
• 2 Tablespoons of Olive Oil
• 1 Package, 10.9 Ounces of Fresh Express Sweet Kale Chopped Kit

Heat oven to 350 F.

Prepare the stuffing according to the package’s directions. Add 1 Cup of Apples and fluff the Stuffing with a fork; let it cool for 15 minutes.

Remove anything inside the Hens, rinse the cavity with cold water and pat it dry.

In a small saucepan, melt the Butter over Low Heat. Add 1 Teaspoon of the Italian Seasoning, the Paprika, 1 Teaspoon of Salt, the Garlic Powder and the Pepper; mix it well and remove it from the heat.

Fill the cavity of each Hen with the Apple Stuffing.

Place the Hens in a 13-by-9-by-2-inch baking dish. Tie the legs together, tuck the wings under and baste it with the Butter Mixture.

Bake it for 50-60 minutes, or until the thermometer inserted in the thickest part of the thigh reads 165 F and the Stuffing temperature reads 165 F. Baste it with the Butter Mixture every 15-20 minutes.

In a bowl, toss the Sweet Potatoes with the remaining Italian Seasoning and the Olive Oil. Arrange them in a single layer on a sheet pan and sprinkle them with salt, to taste.

Bake it with the Hens for 25 minutes, or until they are tender. Remove them from the oven and cool. Tent the Hens with foil and let them rest for 10 minutes.

Place the greens from the salad kit in a large bowl. Add the remaining Apples and the Sweet Potatoes; mix it well and toss it with the Salad Dressing. Add the toppings and toss it to combine everything.

Serve the Cornish Game Hens with the Sweet Potato Kale Salad.

• 1 1/2 Pounds of The Little Potato Company Little Potatoes
• 1 Tablespoon of Vegetable Oil
• 1/2 Teaspoon of Salt
• 1/4 Teaspoon of Pepper

Preheat the oven to 400 F.

In a large bowl, toss the little potatoes with the Oil, the Salt and the Pepper until they are coated.

Ornament Cookies
Prep time: 25 minutes plus 1 hour to decorate

Yield: 2 dozen cookies

Cookies:
• 1 1/2 Cups, 3 sticks of Unsalted Butter, at room temperature
• 1 Cup of Domino Golden Sugar
• 1 Teaspoon of Pure Vanilla Extract
• 1 Large Egg
• 3 1/2 Cups of All-Purpose Flour
• 1/4 Teaspoon of Salt

Royal Icing:
• 4 Cups of Domino Powdered Sugar
• 3 Tablespoons of Meringue Powder
• 1/3 Cup, plus 2-3 Tablespoons of Warm Water, divided
• desired Food Coloring

To prepare the Cookies: In a large bowl, beat the Butter and the Sugar until they are light and fluffy. Add the Vanilla and the Egg; beat them until they are well combined. Scrape the sides of the bowl as needed. Add the Flour and the Salt; beat them until they are just combined.

Dump the mixture onto a lightly floured surface and divide in half. Shape each half into disks and wrap them with plastic wrap. Refrigerate them for 30 minutes.

Preheat the oven to 350 F. Line two baking sheets with parchment paper.

Working on a lightly floured surface, roll the Dough to ½ an inch thick. Cut the Cookies using an ornament-shaped cookie cutter. Place the Cookies on prepared pans and bake them for 18-20 minutes, or until they are golden brown. Remove them from the oven and cool them at room temperature.

To make the Royal Icing: In a large mixing bowl, combine the Powdered Sugar, the Meringue Powder and 1/3 Cup of Water. Beat it on low speed until it is combined. Increase the speed to medium-high and beat for 8-10 minutes, adding 2-3 Tablespoons of Warm Water, as necessary. The Icing should be stiff enough to hold peak when tested.

Color the Royal Icing with food coloring and decorate the Cookies.
